This Friday’s dish is one of the most cherished dishes in Persian cuisine. Originating from the northern regions of Iran, especially the province of Gilan near the Caspian Sea, this dish reflects the area’s rich use of walnuts and pomegranates. Fesenjoon is a slow-cooked stew traditionally made with ground walnuts and pomegranate molasses, creating a unique balance of sweet and tangy flavors. It is most often prepared with chicken or duck.
